How to Make Gluten-Free Enchiladas

Enchiladas are tortillas filled with meat, cheese and chili sauce. The dish is a staple of Mexican-American, or Tex-Mex, restaurants. Unfortunately, for people with a gluten allergy, it is not always easy to know whether the dish is gluten-free--although they are normally made from corn, the sauce and meat can sometimes have traces of gluten. You can ensure that the enchiladas you eat are gluten-free by easily making your own for a relatively low cost. Add this to my Recipe Box.

Instructions

    Preheat the oven to 350 degrees Fahrenheit.

    Cook the ground beef in the skillet over a medium heat. Add the taco seasoning.

    Pour the jar of salsa into the bottom of the casserole dish.

    Run each tortilla under water, and heat each one individually in the microwave for 20 seconds.

    Spread a thin layer of refried beans onto each tortilla. Add a layer of meat. Roll each tortilla into cigar shapes and place them in the casserole dish with the fold down.

    Pour the enchilada sauce on top of the tortillas. Spread the cheese on top of the enchilada sauce.

    Bake for 30 minutes.
